For those who love muffins, but not only, in addition to the lot of sweet versions, we show a savoury variant to be enjoyed as an appetizer: muffins with cooked ham and peas, perfect for a tasty snack.
Ingredients for 12 muffins:
200 g Peas
100 g Cooked ham
200 g Wheat flour
100 ml Milk
170 g Eggs (3)
1 sprig of parsley
EVO oil to taste
100 g Pecorino cheese to be grated
10 g Instant yeast for savoury preparations
Salt up as to taste
Black pepper to taste
100 ml Seed oil
Our recipe:
to make the savoury muffins with peas and cooked ham, start grating the pecorino, then dice the cooked ham and sauté it in a pan over medium heat for about 10 minutes.
Once it is well browned, turn off the heat. Heat a little oil in a pan and pour the peas.
Cook the peas for 2-3 minutes, they must remain crunchy, when cooked, add salt and pepper.
Wash, dry the parsley and chop finely with a knife. Now pour the eggs into a bowl, start whisk them, then pour in the milk while continuing to mix.
Once the mixture is amalgamated, add salt and pour the flour and baking powder a little at a time, always mixing with a whisk, until they are completely incorporated.
At this point add the diced ham, grated pecorino, peas and chopped parsley.
Pour in the seed oil and gently mix the mixture trying not to crush the peas.
Transfer the mixture into a piping bag without a nozzle (if you are not familiar with using the piping bag, you can fill the moulds with the help of two spoons and letting some of the mixture slip inside).
Place some paper cups in a 12-muffin pan, then squeeze the dough into the cups, filling them 2/3 full. Bake the muffins at 180 degrees for 30 minutes or until they are golden on the surface. When cooked, take the savoury muffins with peas and ham out of the oven, let them cool before serving.
